Egg Drop

A simple and nutritious breakfast recipe.
Ingredients
- half a red bell pepper, diced
- half a yellow bell pepper, diced
- half a small tomato, diced
- half a small yellow onion, minced
- 2 eggs
- 50g black pepper ham, cut into squares
- a few dashes of ground black pepper
- a few dashes of unsalted mixed herbs
- a pinch of salt
- dash of garlic powder
- dash of parsley flakes (garnish - optional)
- Oil for frying
Instructions
- Preheat oven to 180degC.
- Heat oil in a pan.
- Sweat the yellow onion.
- Add in the diced yellow and red peppers.
- Add in the ham and diced tomatoes, ground black pepper,salt, unsalted mixed herbs and garlic powder and mix well.
- Divide this mixture into two ramekins then crack an egg into each ramekin.
- Bake for 12-15min for a runny egg. Bake at 18-20 minutes for a less runny egg.
- Add a couple of dashes of parsley flakes over each ramekin before serving.
