If you love Ritz crackers, then there is no reason why you will not like this baked cod with Ritz crackers crust recipe! I first saw this on another Singapore mom blogger’s blog and found the link to the original recipe there. I’ve always been a fan of fish topped with a yummy crust and I’m so glad to be able to make this at home! And the bonus? – It’s waaayyy too easy to make!
I didn’t change much of the original recipe when I cooked it, though in the recipe below, I have recommended that you add less butter because mine turned out a tad too creamy and rich for my liking. It’s really wonderful when you take the first bite and subsequent mouthfuls just get more difficult to swallow because of the richness – but that could be just me. I think because cod is already creamy and an oily fish, we can cut down on the butter.
Baked cod with Ritz crackers crust (scroll down for the free printable recipe)
Ingredients:
- 600g skinless cod fillets
- Salt
- 24 Ritz crackers
- 2-3 Tbsp unsalted butter (I used 4 so I’d recommend using less)
Method:
1. Preheat the oven to 180degC.
2. Crush the Ritz crackers in a ziploc bag – it should resemble coarse bread crumbs.
-
3. Place the cod in a baking dish. Rub a little salt on the cod.
4. Melt the butter and mix it together with the ritz crackers in the ziploc bag.
5. Top the cod with the ritz crackers and bake for 20-25min (depending on the thickness of your cod).
6. Plate immediately as the Ritz crackers which fall to the base of the baking dish will turn a tad soggy.
My darlings’ portion – shared by my two kids. Boy absolutely loved it and kept coming back for more while the girl found it too rich and was only interested to eat the crust. Typical.
