That’s not red wine, in case you’re wondering. πŸ˜€ The deep red hue does kinda resemble that of red wine though. And although a mom’s probably entitled to some wine now and then, this just ain’t it. This is a healthy apple beetroot and carrot juice drink! I feel so healthy already just saying that out loud! Ok, so I’ve made beetroot soup before but because we didn’t like the taste of beetroot – yes, we’ve confirmed it, we really don’t like it – and I’m never making it again, so those beetroots in the fridge have to go somewhere other than the trash bin. So woohoo! I’ve decided to just juice them and save me all that trouble to make a soup nobody in the family likes.

It’s recommended to use a juicer instead of a blender for the juice but I only have a blender so I had to strain the juice after blending it, so erm, really, that was quite a bit of work there. Yeah, you got the hint. Use the juicer. Unless you really like red liquid on your hands. Thank God it doesn’t stain.

Apple beetroot and carrot juice recipe

Ingredients
  • 2 beetroots, skinned and chopped into chunks
  • 1 large carrot, skinned and chopped into chunks
  • 1-2 apples, skinned and chopped into chunks
  • Some water to get the blender moving [if using the blender]
Instructions
  1. Place the prepared fruit and vegetables into a juicer.
  2. If using a blender, you may need some water to get the blender to start blending properly. Adjust according to the needs of your blender. Strain the juice.

Also you may want to note that beetroot juice should be combined with other juices as consuming purely beetroot juice could cause temporary paralysis of your vocal chords, make you break out in hives, increase your heart rate, cause chills or a fever. I’m not sure if that’s true, but I’m not gonna try. πŸ™‚ I don’t think I could stomach beetroot juice on its own anyway.

Ginseng roots with mai dong drink

The weather has been really bad recently – scorching heat in the morning and early afternoon followed by thunderstorms in the evening. I’ve been wanting to boil some ‘cooling’ drink but only got to do so today. Instead of simply boiling barley, I decided to try something new.

This Ginseng root with mai dong (ιΊ₯冬) drink is not only ‘cooling’ but also energy-giving due to the ginseng. Mai dong is anti-bacterial and improves immunity. If you don’t want to add ginseng roots, you can also just brew mai dong on its own (check out the mai dong drink recipe). Mildly sweet due to the candied wintermelon and a hint of bitterness due to the ginseng, I find this drink refreshing and almost invigorating. πŸ™‚

Ingredients
  • 1 large handful ginseng root
  • about 35g ophiopogon tuber
  • 5-6 sticks candied wintermelon
  • about 1-1.5 L water
Instructions
  1. Rinse the herbs.
  2. Add all the herbs into the pot of water and bring to a boil.
  3. Leave it to boil for 5min then turn off the fire and cover the pot.
  4. Leave it to steep for at least half an hour before consuming the drink.

Alicia drank 1 cup of this too (her baby cup)… I was surprised that she actually drank it (and finished every drop at that) because I wasn’t expecting her to be able to tolerate that hint of bitterness (which intensifies the longer you let the ginseng roots steep in the drink).
