Easy fried rice

It’s been very hectic for me lately, with my girl suddenly falling ill on Tuesday – stuffed and runny nose and a slight cough. Fortunately, she’s showing signs of recovery and there’s hardly a cough and the mucus is drying up now *cross fingers* And because she’s spending more time awake recently so I’ve had very little time to call my own… but I really enjoy every moment spent with her! She’s so responsive and picking up things so quickly now that I’m trying my best to capture every teaching moment.

Anyway, I digress.

This was supposed to be a post about my easy fried rice. I scheduled to cook it yesterday as I knew I didn’t have much time to whip up a ‘proper’ meal (had arranged an appointment with the insurance agent to come over). I pair this, together with a soup (head over to the complete collection of soup recipes), when I’m very busy and don’t have much time to spend in the kitchen.

And so, here it is.

Ingredients
  • 1.25 cup rice grains (I used the cup that comes with the rice cooker - 200g of grains)
  • 160ml (a full cup of water, using again, the cup that comes with the rice cooker)
  • 1 bowl of frozen mixed vegetables (about 180g)
  • $5 worth of char siew (from the foodcourt)
  • 2 eggs
  • 20g minced garlic
  • 1-2 tablespoons fried shallots (reserve about 1-2 tablespoons of the oil in which it was fried)
  • light soy sauce/ fish sauce to taste
  • 2 tablespoons oil
  • 3 stalks of scallions (washed, chopped)
Instructions
  1. Cook rice in the rice cooker. Dish out the rice and refrigerate for a few hours or overnight.
  2. Thaw the frozen mixed vegetables and chop the bought char siew into smaller pieces.
  3. Crack one egg into the cooked (chilled) rice and mix thoroughly. Beat the other egg in a bowl and set aside.
  4. Heat oil in a wok then add in the garlic and fry till fragrant.
  5. Add the thawed mixed vegetables and stir fry for a minute.
  6. Add the cooked rice and mix the ingredients well.
  7. Swirl the beaten egg over the rice.
  8. Add light soy sauce/ fish sauce to taste.
  9. Top with char siew and scallions.
Notes
You may add chicken, prawns, sausages, crabsticks or any other ingredients of your choice.

French beans with egg recipe

Here’s another simple home-cooked vegetable dish. πŸ™‚ This goes very well with a piping hot bowl of porridge though rice would do too!

I like to slice the french beans really thinly. If you’re new to cooking and meal preparation, and you’re not so well versed with the knives in your kitchen yet, you may need some time to slice the french beans. Other than that, I don’t think this dish is difficult to master at all. In fact it’s quite forgiving because french beans don’t cook very fast so you don’t have to be afraid of overcooking it too quickly and you can leisurely taste for done-ness of the vegetable as you cook it over the stove.

Ingredients
  • 2 handfuls of french beans / 1 packet from NTUC (sliced thinly diagonally)
  • 1 egg (beaten)
  • 2 cloves garlic (minced)
  • fish sauce/ light soy sauce to taste
  • 100ml water/stock
  • 2 teaspoons oil
Season the egg with:
  • ½ teaspoon light soy sauce
  • a dash of sesame oil
  • a dash of ground white pepper
Instructions
  1. Snap off both ends of the french beans and pull off as much of the 'fiber' as possible in the process.
  2. Wash the french beans then slice thinly, diagonally.
  3. Fry the garlic in the oil in the wok.
  4. Add the french beans and stirfry for 1 minute.
  5. Add in water/stock and simmer the french beans till cooked and there's not much water/stock left.
  6. Add fish sauce/ light soy sauce to taste.
  7. Swirl in the beaten egg bit by bit over the french beans.
  8. When the egg is cooked through, dish and serve.
