Our dinner: cereal prawns, black pepper chicken chop and watercress soup

I adapted the recipe from My Wok Life and the cereal prawns tasted awesome! πŸ™‚ The aroma of the curry leaves combined with the crispy prawns and flavourful cereal bits….mmmph… can you just imagine that? πŸ™‚ Pure indulgence: such a huge plate of prawns just for the two of us. πŸ˜€ which of course means it’s super fattening! This is not a dish you’d want to consume when you’re watching your diet.

I told hubby to leave 1 prawn for alicia but he forgot and ate everything up… oh well.

So here’s my slightly modified recipe! I’ve cooked this for my extended family as well and they all love it too. Such a clever idea of using the instant cereal drink for this dish!

Cereal prawns recipe

Cereal prawns (麦片虾) (and last night's dinner)

Ingredients
  • ½ kg of medium prawns, trimmed and deveined
  • Curry leaves (from 3-4 stems)
  • 2 cloves of garlic, minced
  • 2 chilli padis, sliced
  • 30-40g unsalted butter (I use Lurpak)
  • 2 cups of cooking oil (for deep-frying)
Cereal coating
  • 3 sachets of Nestum 3-in-1 Low-fat Cereal
  • A pinch or two of salt
  • A few dashes of ground white pepper
Seasoning of prawns:
  • Sprinkle a mixture of sesame oil, pepper and light soy sauce
Instructions
  1. Clean prawns with shell intact, trim legs. Use scissors to cut a slit at the back of prawns to devein. Pat dry the prawns with kitchen towel then season the prawns. Let it sit for at least 10minutes (in the fridge if leaving it to marinate for longer).
  2. Heat wok with oil over high heat. Make sure oil is heated till really hot before deep frying prawns for 1 minute or until pink and crispy. Drain on kitchen towel and set aside.
  3. In a small (clean and dry) bowl, pour out the sachets of cereal. Mix in salt and pepper. Set aside.
  4. Remove excessive oil from the wok and heat butter over medium-low heat. Add garlic and fry till fragrant (about 30seconds), and add in chilli padi and curry leaves and stir fry till fragrant.
  5. When done, turn off the heat and immediately add in cereal mixture and cooked prawns. Stir quickly to combine well. Serve immediately.

Crockpot chicken wings stew for the toddler!

I marinated the chicken wings the night before yesterday and hence I had to find some way to cook it without stinking up the machine-load of clothes that was drying in my kitchen. I figured that the crockpot would be the way out for me and so voila! Crockpot chicken wings stew was Alicia’s dinner last night. πŸ™‚
It’s much oilier than the previous crockpot chicken stew I made for her simply because in the other recipe, I used chicken fillet (which has no skin). Anyway, because it was a last minute decision to cook this and ingredients are seriously starting to run out in my pantry (thank God that my mum is here today so I can go marketing in peace!), I was secretly hoping that the stew would turn out fine – and it did. Phew.

Ingredients:
  • 2 chicken midwings
  • 2T diced carrot
  • 2-3T diced potato
  • 2-3T diced sweet potato
  • 2 shallots, sliced thinly (I had wanted to fry this but the clothes hanging over my head were a constant reminder that I had to do what was rational)
  • water

Method:
  1. Place all the ingredients into the crockpot (the wings are to be put in last).
  2. Pour water into the crockpot such that it almost covers the wings.
  3. Slowcook for 2-3hours and you get a very savory sweet stock as well! πŸ˜€
