Easy white pasta sauce – no cream needed, just Honest Milk

A 20-minute white pasta sauce recipe without cream!
  • For the roux:
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose plain flour
  • 2 - 2¼ cups milk
  • 1 teaspoon ground black pepper
  • 4 teaspoons oregano
  • salt to taste
For the rest of the pasta ingredients
  • 250g uncooked spaghetti
  • 1 tablespoon unsalted butter
  • 140g ham, diced
  • 250g mushrooms, sliced
  • freshly ground black pepper
  1. Set pasta to cook as per instructions on packaging.
  2. Meanwhile, clean the mushrooms and slice them and dice the ham.
  3. In a saucepan, melt 2 tablespoons of butter and add in 2 tablespoons of flour. Stir to combine.
  4. Add milk slowly. Stop to whisk in between until a mayonnaise texture is achieved.
  5. Add oregano, ground black pepper and salt. Set the roux aside.
  6. In a frying pan, melt 1 tablespoon of butter and add the sliced mushrooms.
  7. Once the mushrooms start to release their juices (5 minutes or so), add in the ham.
  8. Add the roux to the mushroom-ham mixture and mix well.
  9. Taste the sauce and add more salt/pepper/oregano if necessary. Add more milk if the sauce is too thick. Bring the sauce to a simmer on low heat (do NOT boil the milk).
  10. Combine the pasta and sauce.
  11. Serve with freshly ground black pepper.
