A heartwarming traditional Chinese soup
Ingredients
  • about 500g peanuts, rinsed a few times
  • 300g pork ribs
  • 2 chicken carcasses
  • 3-4L water
  • 5 small dried scallops
  • 1-2 small dried cuttlefish (omit if cooking for kids below 18mths)
  • 3 cloves of garlic, rinsed, keep peel on
  • fish sauce to taste
Instructions
  1. Bring pork ribs and chicken carcasses to boil in a pot of water (enough water to cover all the bones).
  2. Remove the bones and place them in a soup bag together with the garlic and dried cuttlefish.
  3. Place the soup bag of ingredients, peanuts and the dried scallops into a soup pot with 3-4L water.
  4. Bring the soup to a boil and simmer for 3-4 hours for a hearty peanut soup.
  5. Season with fish sauce or other condiment of your preference to taste.
