Baked cod with Ritz crackers crust

Ingredients
  • 600g skinless cod fillets
  • Salt
  • 24 Ritz crackers
  • 2-3 Tbsp unsalted butter (I used 4 so I'd recommend using less)
Instructions
  1. Preheat the oven to 180degC.
  2. Crush the Ritz crackers in a ziploc bag - it should resemble coarse bread crumbs.
  3. Place the cod in a baking dish. Rub a little salt on the cod.
  4. Melt the butter and mix it together with the ritz crackers in the ziploc bag.
  5. Top the cod with the ritz crackers and bake for 20-25min (depending on the thickness of your cod).
  6. Plate immediately as the Ritz crackers which fall to the base of the baking dish will turn a tad soggy.
