French beans with egg

  • 2 handfuls of french beans / 1 packet from NTUC (sliced thinly diagonally)
  • 1 egg (beaten)
  • 2 cloves garlic (minced)
  • fish sauce/ light soy sauce to taste
  • 100ml water/stock
  • 2 teaspoons oil
Season the egg with:
  • ½ teaspoon light soy sauce
  • a dash of sesame oil
  • a dash of ground white pepper
  1. Snap off both ends of the french beans and pull off as much of the 'fiber' as possible in the process.
  2. Wash the french beans then slice thinly, diagonally.
  3. Fry the garlic in the oil in the wok.
  4. Add the french beans and stirfry for 1 minute.
  5. Add in water/stock and simmer the french beans till cooked and there's not much water/stock left.
  6. Add fish sauce/ light soy sauce to taste.
  7. Swirl in the beaten egg bit by bit over the french beans.
  8. When the egg is cooked through, dish and serve.
