As promised in my earlier Philips Jamie Oliver blender post about desserts, here’s the recipe for the refreshing mango sorbet – great for combatting the heat for sure!
Mango Sorbet

A deliciously refreshing dessert.
Ingredients
- 2 rainbow mangoes
- 250ml water
- 6 teaspoons sugar
- juice of 6 limes
- grated zest of 3 limes
- 1-2 tablespoons golden syrup
Instructions
- In a small saucepan, combine sugar with the water and bring it to a gentle simmer, making sure that all the sugar is dissolved.
- Squeeze the juice of 6 limes and grate the zest of 3 limes.
- Add the juice and zest to the sugar syrup.
- Add the golden syrup to the the sugar syrup.
- Chop the mango flesh of 1.5 mangoes into chunks and process in a blender. Blend till smooth. Dice and reserve the remaining mango flesh to be served with the sorbet.
- Add the syrup and pulse till well-mixed.
- Pour the contents into a freezer-safe container and freeze for at least 8 hours.
- Serve with fruits such as blueberries (great combo!), strawberries, cherries and diced mango.
Notes
When you want to serve the mango sorbet, leave it out for a few minutes before attempting to scoop it so that it isn't too hard.
