Mango Sorbet

The blend of flavours is just delectable!

As promised in my earlier Philips Jamie Oliver blender post about desserts, here’s the recipe for the refreshing mango sorbet – great for combatting the heat for sure!

A deliciously refreshing dessert.
Ingredients
  • 2 rainbow mangoes
  • 250ml water
  • 6 teaspoons sugar
  • juice of 6 limes
  • grated zest of 3 limes
  • 1-2 tablespoons golden syrup
Instructions
  1. In a small saucepan, combine sugar with the water and bring it to a gentle simmer, making sure that all the sugar is dissolved.
  2. Squeeze the juice of 6 limes and grate the zest of 3 limes.
  3. Add the juice and zest to the sugar syrup.
  4. Add the golden syrup to the the sugar syrup.
  5. Chop the mango flesh of 1.5 mangoes into chunks and process in a blender. Blend till smooth. Dice and reserve the remaining mango flesh to be served with the sorbet.
  6. Add the syrup and pulse till well-mixed.
  7. Pour the contents into a freezer-safe container and freeze for at least 8 hours.
  8. Serve with fruits such as blueberries (great combo!), strawberries, cherries and diced mango.
Notes
When you want to serve the mango sorbet, leave it out for a few minutes before attempting to scoop it so that it isn't too hard.
